Not Gluten Free

Is Marugame Udon Gluten Free?

No — Marugame udon is not gluten free. Udon noodles are made primarily from wheat flour, the tempura toppings are coated in a wheat-flour batter, and the tsuyu dipping sauce is wheat-based. There is no gluten-free noodle substitute available at any Marugame location in Japan.

Marugame at a Glance for Celiacs

  • Udon noodles — made primarily from wheat flour
  • Tempura batter — coated in wheat flour before frying
  • Tsuyu (dipping broth) — wheat-based via soy sauce
  • Gluten-free noodle substitute — not available
  • Shared kitchen & noodle-boiling water — high cross-contamination risk
  • Overall safe for celiacs — No

Why Marugame Is Not Gluten Free

Udon noodles are wheat

Udon noodles are made primarily from wheat flour — wheat is the essential nature of the dish. There is no rice noodle or gluten-free noodle substitute offered, and it is not possible to remove the wheat from udon without changing what the dish is.

Tempura batter contains wheat

Marugame's tempura toppings — a popular add-on to any udon order — are coated in a wheat-flour batter before frying. Adding tempura introduces a second source of wheat on top of the noodles themselves.

Tsuyu (dipping broth) is wheat-based

The dashi-based tsuyu used for dipping and broth is seasoned with soy sauce, which is derived from wheat. Even setting aside the noodles and tempura, the sauce itself is not gluten-free.

Cross-contamination risk

Marugame is a high-turnover, high-volume udon chain. The kitchen boils large batches of wheat noodles in shared water and prepares tempura in shared fryers throughout the day, making cross-contamination unavoidable even for menu items ordered without noodles or tempura.

No Gluten-Free Noodle Option

Marugame does not offer a rice noodle, shirataki, or any other gluten-free noodle substitute for udon. Because wheat is the defining ingredient of udon, there is no way to modify the order to make it safe — the dish's identity is wheat noodles. Celiacs should skip Marugame entirely rather than attempt to customize an order.

Frequently Asked Questions

Is Marugame udon gluten free?

No. Marugame udon is not gluten free. Udon noodles are made primarily from wheat flour, and the tempura batter and tsuyu dipping sauce are also wheat-based. There is no GF option available at Marugame in Japan.

Can celiacs eat udon?

No. Udon noodles are wheat noodles by definition, so it is not possible to remove the wheat and still have udon. At Marugame, the tempura toppings, tsuyu broth, and shared kitchen add further risk on top of the noodles themselves.

Does Marugame have gluten-free noodles?

No. Marugame does not offer a rice noodle, shirataki, or any other gluten-free noodle substitute for udon at any Japan location.

Is Marugame tempura gluten free?

No. Marugame's tempura toppings are coated in a wheat-flour batter before frying, making tempura unsafe for celiacs in addition to the udon noodles.

Can I ask Marugame staff about gluten in Japanese?

You can ask "Komugi ga haitte imasu ka?" (小麦が入っていますか?) to check for wheat, but standard udon, tempura, and tsuyu all contain wheat — there is no allergen-modified version of the core menu to request instead.

What can I eat instead of Marugame udon in Tokyo?

Look for rice-noodle ramen instead — Afuri offers a certified gluten-free option in Shibuya. Shirataki (konjac) noodles are another naturally gluten-free substitute, and 100% buckwheat juwari soba is safe if confirmed with staff.
